I learned about this recipe cooking dinner at Youth Without Shelter with the lovely staff at the Pinball Clemons Foundation. PCF goes to the shelter once a month to cook dinner. I have been lucky enough to join them a few times to make their famous Jerk Chicken Dinner. This Corn Bread is a youth favourite and I absolutely love it!

Recipe
½ cup butter
2/3 cup white sugar
2 eggs
1 cup buttermilk
½ teaspoon baking soda
1 cup cornmeal
1 cup all-purpose flour
½ teaspoon salt
Directions
Preheat oven to 375 degrees F (175 degrees C). Grease an 8 inch square pan.
Melt butter in large skillet. Remove from heat and stir in sugar. Quickly add eggs and beat until well blended.
Combine buttermilk with baking soda and stir into mixture in pan.
Stir in cornmeal, flour, and salt until well blended and few lumps remain.
Pour batter into the prepared pan.
Optional: I like to sprinkle some grains of salt and sugar on the top to create a little crust!
Bake in the preheated oven for 30 to 40 minutes, or until a toothpick inserted in the center comes out clean.
Cornbread recipe is pretty much the same as mine and its delicious. I have a great key lime pie recipe that everyone always asks for - wondering what the best way to post is? Also tried it gluten free last time by using honey nut cheerios instead of graham crumbs for the crust. It was good, just tasted a little nutty!
